Yellowstone Debuts Special Finishes Whiskey Collection to Honor Bourbon’s Rich History ‘While Keeping Things Fresh and Exciting’

On Monday, Lebanon, Kentucky-based whiskey brand Limestone Branch announced the rollout of the Yellowstone Special Finishes Collection. The inaugural offering is a toasted stave expression.

Per Limestone Branch, the expression was finished in a barrel made from five different staves: high toast, American oak double-toast, vanilla, rick house and spice rack.

The bourbon is distilled from the signature Yellowstone bourbon mashbill. After the distillation and aging process, it is finished in the custom barrel.

“The Yellowstone Special Finishes Collection is a great way to honor more than 150 years of bourbon heritage while keeping things fresh and exciting,” Stephen Beam, Limestone Branch distillery manager, said in a news release from the brand. “I began experimenting with toasted barrels in 2016, 2017 and 2018, with Yellowstone Limited Edition releases and again more recently with distillery-exclusive Yellowstone Toasted Single Barrel. My experience helped in crafting what stave flavors to use and at what percentage to get the right flavor profile for Yellowstone Toasted. I can’t wait for consumers to try this latest full-time member of the Yellowstone Bourbon family.”

The bourbon was aged for four years and bottled at 100 proof. Yellowstone Toasted hosts a suggested retail price of $50 per 750-milliliter bottle.

Limestone Branch has been busy experimenting with different finishes quite a bit these past few months. In July, the MGP-owned brand pushed the envelope with a release finished in Hungarian Tokaji casks. The brand chose to age the whiskey in casks that housed a Hungarian dessert wine because it wanted to do things “a little bit different than what everyone else is doing,” per the news release.

Nose: Toasted caramel and vanilla, interlaced with autumn spices and cinnamon.

Taste: Medium-bodied, with walnut, toffee, black tea and white pepper.

Finish: Infused with cocoa, tobacco and oak.
