Based in Marin County, California, the brand makes use of a process dubbed distillate reconstruction, which utilizes real ingredients like white oak and Blue Weber agave to approximate the look, aroma and texture of bona fide liquor. The three Michelin-starred Eleven Madison Park recently forayed into the world of non-alcoholic beverages with a vermouth helmed by the restaurant’s beverage director, Sebastian Tollius. A heady mix of fennel seeds, coriander, rosemary and wormwood are among the 18 botanicals infused in Niagara grape juice for this semi-sweet concoction, ideal for spritzes and neat pours. The Zero Proof has it on sale at $22.40.
