WhistlePig Declaration Wheat Whiskey is a high-wheat American whiskey made from a blend of whiskeys sourced in Vermont and Indiana. The whiskey is double-aged in new American oak barrels before being finished in Wave Stave barrels, a process designed to create a gradient of toasted flavors and added complexity. Bottled at 43% ABV (86 proof), it is a limited-time release commemorating the United States' 250th anniversary and retails for around $87.
A smooth and simple whiskey. Not one of my favorites from WhistlePig, but it’s a light, easy sipper that would operate well as a summer whiskey. Serve it at your 4th party!
Quite sweet on the palate with a healthy dollop of almond butter and orange blossom honey, the rye influence is at first less evident but builds as the midpalate develops, effectively melding sweet and spice.

House Review
Nose:
The nose is pretty tame — hay, cream, apple, nutmeg, a touch of blueberry and elderflower.
Taste:
Thin to moderate mouthfeel. Oak and tannin meet wheat bread, blueberry pie, chestnut, coffee and lemon peel.
Finish:
The finish is a mix of biscuits, pepper and coffee grounds.
Overall:
A smooth and simple whiskey. Not one of my favorites from WhistlePig, but it’s a light, easy sipper that would operate well as a summer whiskey. Serve it at your 4th party!
