Stellum Single Barrel Bourbon Perseus is a cask-strength single barrel bourbon produced by Barrell Craft Spirits under the Stellum label and sourced from MGP in Indiana. It uses a mash bill of 75% corn, 21% rye and 4% barley malt, with samples selected starting in May 2022, and barrels are typically aged around 6 years. ABV varies by barrel but generally falls between 55% and 60%, and retail pricing typically runs $40-$60 depending on the market and barrel selection.

The nose on this one is unique! There's a plum note right up front with a dry woody smell sitting behind it. But then something unexpected comes through… a sweet sugar note, almost like cotton candy. It's a strange combo on paper but it works.
The palate is where this bottle really shines. There's a very powerful purple grape note that hits on the mid palate and then transitions into something like chocolate cake on the finish.
More chocolate cake, but the chocolate notes are light, not deep or bitter. I'd compare it to a light milk chocolate. It's subtle but it rounds the whole thing out beautifully.
Overall this is an awesome pour that I like to call a "rollercoaster" pour. It takes you on a journey of ups and downs throughout each sip with the flavor changing in a great way. You think you know where it's going and then it shifts on you. Really fun bottle to sit with.
