Carl T. Huber's Bourbon Finished in Honey Barrels is a cask strength whiskey produced by Starlight Distillery in Indiana. Aged over four years in new charred American oak, it is finished in used bourbon barrels that previously held fresh honey from the Huber estate. Bottled at 55% ABV in a 750ml format, this release retails for $74.99.

Sweet nose with honey galore — smells like real fresh honey.
Simple but enjoyable palate. Black pepper and oak mingle with a huge fresh honey note.
Honey guides the finish — it’s interesting, the finish is pretty slow and long, while being almost pure honey throughout (a bit of pepper and cinnamon appear for a bit). The honey strikes different notes as the finish concludes — it’s a finish almost akin to honey slowly trickling down the back of your throat.
Pretty one-note, but seriously delicious stuff. I couldn’t drink this every day, but it's a banging sweet-tooth whiskey.
