Bomberger’s Declaration Kentucky Straight Bourbon 2026 highlights the brand’s signature use of Chinquapin oak, paired with Hungarian oak to, according to brand tasting notes, add layers of chocolate, cherry and baking spice. Both oak varieties were naturally seasoned and air-dried for three years before receiving a custom toast and char. Bottled at 54% ABV, or 108 proof, the bourbon carries a suggested retail price of $120.

The nose is fairly fruit forward, opening with blueberries, overripe banana and orange peel. Joining the party are leather, brown sugar, crème brûlée, cinnamon and cornbread.
Moderate viscosity — mouth-coating and very dry. The palate is oaky, with an agreeable flavor profile. Big banana bread note is joined by a big hit of cocoa powder, as well as plenty of dried cherry, raisin and cinnamon. The back palate turns darker and oakier, with semisweet chocolate, tobacco, dried cherries, leather.
The finish leads with oak, caramel and dark chocolate. Spice soon trickles in: cinnamon and pepper, mostly.
