Dillon Rhum Blanc Agricole 55° is a white rhum agricole from Martinique made from fresh pressed sugarcane juice and distilled using a copper column still. The rum is rested for 5 weeks in stainless steel tanks before being bottled at 55% ABV. It sells for around $25-30 for a 1-liter bottle.
Grassy and vegetal it has a slight minty touch to it – spearmint and some hints of pine. There is a touch of sour cream on the nose – nice notes of ginger and all spice.
On the palate the high ABV makes itself known. Green chilli, boiled corn on the cob, unripe plums and plenty of grassy notes. Juniper leaves tea, grapefruit zest and coriander. Agave syrup, green apples and a touch of almond flavours. The finish is long with cane juice and vegetal notes.
The vibrant aromas burst with ripe fruits and zesty citrus, leading to a sweet sugarcane-filled palate. A touch of smoke intertwines with caramelized sugar notes.
