Texas’ First Bourbon Distillery Just Announced the 2025 Drop of Its Delicious Cognac-Finished, Honey-Infused Whiskey

Texas’ first legal bourbon distillery, Garrison Brothers, on Thursday unveiled the 2025 edition of Lady Bird, a honey-infused, cognac-finished bourbon. The distillery will sell the first 1,000 bottles at its Hye location on a first-come, first-served basis starting at 8 a.m. on April 5.

The limited-edition flavored bourbon, first introduced in 2023, is named after Lady Bird Johnson — the wife of former U.S. President Lyndon Banes Johnson — and supports the Lady Bird Johnson Wildflower Center in Austin. For every bottle sold, Garrison Brothers will donate $5 to the nonprofit. To date, sales of Lady Bird have raised over $67,000 for the organization.

Lady Bird begins as Garrison Brothers’ Small Batch bourbon, aged four years in American oak barrels. It is then infused with Burleson’s Texas Wildflower Honey for eight to nine months, before maturing for an additional three years in French Cognac XO casks. Bottled at 114 proof, it is sealed with Prairie Purple wax.

According to Master Distiller Donnis Todd, the bourbon features notes of honey, black cocoa waffle cone, dark chocolate-covered cherries, and dried fruits.

After the initial distillery release, the remaining 6,110 bottles will be available for online purchase by May and distributed to retailers, bars, and restaurants nationwide. The suggested retail price is $179.99.

Garrison Brothers was founded in 2006. The company has gained recognition for its high-proof, small-batch bourbons, winning multiple awards, including Double Gold at the 2024 San Francisco World Spirits Competition.

As part of its community engagement, Garrison Brothers is also the presenting sponsor of the LBJ 100 Bicycle Tour, which will take place on April 2.

We reviewed last year’s Lady Bird release and came away delighted by its bold flavors and balance. We noted the bourbon’s nose carried honey alongside Garrison Brothers’ signature funk, with white pepper, blackberry, cherry and a distinct cognac influence. The taste delivered blackberry, cherry, marshmallow and a honey-forward finish with char and black pepper.
