Woodinville Single Barrel Cask Strength 7 Year Bourbon is a single-barrel bourbon produced at Woodinville Whiskey Co. in Washington state using a mash bill of 72% corn, 22% rye and 6% malted barley, with grains sourced exclusively from the Omlin Family Farm in Quincy, Washington. The grains are mashed and distilled at the Woodinville distillery before the bourbon is aged in new charred oak barrels in Quincy, where temperature swings accelerate maturation. Each bottle comes from a single barrel hand-selected by Head Distiller Brett Carlile and is bottled uncut and unfiltered at cask strength, with proof varying by barrel. Barrel No. 12040 is bottled at 57.95% ABV (115.9 proof). The label describes the whiskey as “dual terroir,” possibly referring to the use of farm-grown grains and maturation in Quincy alongside production at the Woodinville distillery. It carries a suggested retail price of $69.99.

Creamy and full of dark fruit and spice. Sweet cream, graham cracker, cinnamon, ginger, blackberries, blueberry cobbler, cornbread, raspberries, milk chocolate caramels.
Wonderful, creamy viscosity. The palate is surprisingly dry and tannic for a 7-year bourbon. In terms of flavor, it’s earthy and spice-heavy. Clove, cinnamon, black pepper, tobacco, leather, blackberry, plum, caramel.
The finish leads with spice — loads of clove and some cinnamon. From there, it enters into dark chocolate covered almonds and espresso. It settles with pink peppercorns and more clove, plus sassafras, cola and dark cherry syrup.
A dense, nuanced, superb bourbon that’s loaded with baking spice, dark fruits and earthy notes. Excellent release from Woodinville.
