Penelope Bourbon Cooper Series Valencia is a four grain straight bourbon whiskey finished in Vino de Naranja casks from Seville, Spain. Bottled at 97 proof and non chill-filtered, it is a blend of three bourbon mash bills consisting of 75% corn, 15% wheat, 7% rye and 3% malted barley. Aged for four to five years with #4 char staves and #2 char heads, it undergoes a finishing period of approximately one year in the wine casks. This particular bottling is from batch 05.

Heavy toffee, cocoa butter, sweet cream, caramel and orange peel on the nose. Syrupy, sweet, pleasant and loaded with juicy fruit and spice.
Moderate on the palate, nicely proofed but a touch thinner than it could be. Orange peel, vanilla cream, toffee, some pepper and a pop of citrus on the back palate.
Long finish, nice blend of sweet fruit, sweet caramels, big spice and a touch of oak.
Fun and interesting, Valencia is a nice display of a well aged bourbon taking a wine finish and balancing it masterfully. It’s not the boldest or the punchiest, but that’s just fine as well. A couple proof points would do this wonders, I do think, though.
