Parentheses Before is a non-alcoholic, vinegar-based botanical aperitif crafted by the (parentheses) brand, founded by Tawny Lara, a writer in recovery and advocate for the sober curious movement, and her husband, Nick, a fermentation expert with sommelier skills. The brand has a "Before" and "After" expression — one meant to be consumed before a meal and the other following. Before features gentian, ashwagandha, prickly ash, cardamom, citrus and rose. A bottle is priced at around $27.

The vinegar is strong here — it's bold and acidic. This non-alc spirit is bright and citrus-driven, and the herbs are really potent here. I'm getting a fino sherry vibe with brine and lemons.
Nutty up front, yet plenty of bracing acidity from the vinegar. This drinks like a combination of Chablis and fino sherry. I wouldn't have this neat because of the extreme acidity, but with some tonic water, this is a dead ringer for a sparkling Chablis.
Lingers forever. Really interesting and complex for a non-alcoholic spirit, which usually finish short and uninteresting.
Parentheses Before is experimental and innovative. I would definitely pour it over some tonic water for a bright, spritzy aperitivo that mimics Champagne. It's interesting, with plenty of herbs and a nice bitterness on the finish. At last, a zero-ABV beverage we've never seen before. Not everybody is going to get this, but it's weird and fun, and I definitely want to play with it in zero-ABV cocktails.
