Parentheses After is a non-alcoholic botanical aperitif priced at around $27. Made with kelp vinegar, turbinado cane sugar and botanical extracts, it features angelica, cherry bark, marshmallow root, black cardamom, peppermint, lemon balm, calendula, chamomile and lavender, herbs traditionally associated with calming and digestive benefits. It's meant to be consumed after eating — a non-alc digestif, if you will — and has a "Before" counterpart.

There's definitely a dank, earthy, mushroomy smoke quality here. The earthiness of a forest floor is appealing, yet it is cut by a vinegary throughline.
Mushroom and umami. The bacon-y, savory components are prominent here, but there's a bit of that vinegar that kicks up.
Long, and the vinegar quality dominates here.
This is definitely interesting. I'm not sure I'm as partial to it as the vinegar kind of knocks out all that interesting, smoky, umami goodness. Regardless, if you're an amaro fan who likes sour, this will probably be your jam.
