Paladar is the latest release out of NOM 1109, best known for distilling affordable cult-favorite Tequila Arette. This new bottling — also friendly on the budget — is made using cultivated and wild yeast, fermented in pine, and distilled on alambique copper and stainless steel. Most importantly for the spirits die-hards, it's confirmed additive-free.

Rich on the nose and packed with citrus zest, earthiness and creamy sweetness, there’s tons going on.
Light and sweet on the palate, lemon, lime, pepper and vanilla pop at first while subtle char, pepper and rye bread develops on the back palate. A prickle of ethanol and a spicy back palate pop with a pleasant complexity.
Short, clean finish. It’s sweet, light and full of fruit and spice and trails off crisply with a touch of anise.
If you can get past one of the most maddening closures I’ve experienced in all of spirits, you’re rewarded with a pleasant, complex, devilishly easy to enjoy tequila. Nice work Paladar!
