Released in September 2025, this is the second edition of LALO's now-ongoing High Proof series. This time around, LALO has opted for a neat 50% ABV, reportedly bottled at still strength (a first for the brand). Apart from that, the formula has remained completely untouched. Highland agaves, brick ovens, deep well water, champagne yeast and an additive-free recipe.

  • Nose:

    The nose opens with a big whiff of dark, roasty agave. Reminds me of caramel minus the barrel age. Beyond that, there's a thick buttercream character, a hint of salt and an under ripe tropical sweetness akin to green mango or plantain. This is classic LALO through and through, minus the in-your-face fruit aroma of past releases.

  • Taste:

    Heaps of agave undercut but something a little more brooding. Flashes of cocoa, walnuts, cracked black pepper, wet stone and orange pith. It's got an earthy, almost bittersweet vibe that I wasn't expecting from the nose. A silky mouthfeel evens it all out with a nice touch.

  • Finish:

    Hits the back of the palate with a puff of heat. Lime and orange come through alongside an increasingly noticeable saltiness, cinnamon and plenty more agave.

  • Overall:

    Great stuff! Though the outline of LALO is present, it feels like this has a decidedly different attitude than past releases. Tropical fruit and buttery sweetness are expanded upon with a big serving of earth, making this a smidge less approachable than the brand's usual fare. It's a risk that LALO can absolutely take at this point in its journey. Interested to see how variations in proof point affect the brand's flavor profile in years to come, because this tastes like so much more than a compromise between LALO 40% and 54%.
