Not to be confused with the brand's 2023 El Sabino, Lágrimas 2024 La Sabina is the latest single-field release out of the Tequila Cascahuin distillery. This time around, the brand recruited plants from the underrated agave-growing state of Guanajuato. Agaves were cooked in steam-powered masonry ovens over the course of four days, before being split into two batches: 70% crushed with a roller mill and fermented in stainless steel tanks, 30% crushed with a tahona and fermented in open air wood.

  • Nose:

    Silky smooth with loads of custard sweetness. Unexpected notes of lemon curd, confectioner's sugar and pie crust add up to a nostalgic vibe, reminds me of something that my grandma would pull out of the oven after school. Roasted agave is present, though understated, as too is a bit of white pepper spice.

  • Taste:

    Citrus and tropical fruit steals the show. Lime, guava, nectarine, honey and a hint of lactic funk, likely imparted from those open-air wooden vats. Balancing out the sweetness is a minty vegetal note, eucalyptus and fresh ground pepper. Mouthfeel has a dense, buttercream quality that exactly mirrors what I expected from the nose. Apart from that, though, the palate is a beast of its own, hitting plenty of complex flavors without letting any one angle dominate.

  • Finish:

    Citrus peters out into minerality and springtime grass. Flashes of agave syrup, under ripe fruit, limestone and mint.

  • Overall:

    Lágrimas' laser focus on single-field tequila is absolutely paying off. There's so much going on here that I've never quite observed in a typical Jalisco-origin release, especially on the nose. Still can't believe how much the aroma has in common with lemon bars. This is another release from Lágrimas that I'd recommend to just about anyone, and I'd say it narrowly edges out the other 2024 vintage (La Loma) as my new favorite in the catalog.
