Released in June 2025, this is the first expression in Jacob's Pardon's Cask Collective Series. Bottled at 96.5 proof, this 16-year-old American light whiskey was distilled by MGP in Indiana from 99% corn and 1% malted barley and finished in Oloroso sherry casks.

According to the brand, the casks selected are rare 50-year-old Oloroso casks from Bodegas Williams & Humbert. Jacob’s Pardon “Cask Collective” 16-Year-Old Oloroso Sherry Cask-Finished Whiskey has a suggested retail price of $124.99 per 750-milliliter bottle.

  • Nose:

    Very soft and sweet nose. Powdered sugar and French toast galore, with a lovely savory, earthy, mushroomy undertone from the oloroso.

  • Taste:

    Those earthy, mushroomy notes from the nose bubble to the surface on the palate, joined by dried fruit undertones, cotton candy and powdered sugar, forming a satisfying, distinctive palate.

  • Finish:

    Tobacco, bright cherry candies and sponge cake.

  • Overall:

    This is lovely stuff. I adore the profile of the sherry casks Jacob's Pardon sourced for this finishing. The sherry controls the profile, but the light whiskey adds some welcome subtle sweetness, and it's really working for me.
