‘Barbie’ Star and Papa Salt Gin Founder Margot Robbie Reveals Her Favorite Cocktail

In a quest to develop a distinctive gin, “Barbie” star Margot Robbie, her husband, Tom Ackerley, and her circle of friends — Josey McNamara, Regan Riskas and Charlie Maas — delved into the creation of Papa Salt. Drawing inspiration from leisurely Australian coastal moments, the group navigated through numerous iterations before clinching their winning formula.

Opting to anchor their production in Australia, the team selected Lord Byron Distillery as their base. Their objective? Crafting a versatile spirit suitable for various cocktails, from classic gin and tonics to unique concoctions like a gin-based Paloma.

Formulated with ingredients such as Australian oyster shells, roasted wattleseed and pink peppercorn, Papa Salt Gin officially debuted in May 2023. Praised for its unique flavor profile and minimalist sea glass-like bottle, Papa Salt has garnered acclaim within Australia’s craft spirit sphere.

Speaking with Grazia Magazine, each founder has shared their favorite cocktails featuring their co-founded gin.

Robbie prefers Papa Salt and “soda with an orange rind and a crack of black pepper, while McNamara contends that Papa Salt “makes a tremendous Paloma,” despite it being a classically tequila-based drink.

Meanwhile, Ackerley opts for a “dry martini straight up with an olive.” Maas favors his gin paired with Fever Tree Sparkling Lime and Yuzu, noting that “yuzu is the best citrus, it’s not even close, and it pairs perfectly with Papa Salt.”

Regan Riskas, on the other hand, enjoys Papa Salt with soda and “a juicy slice of blood orange and lots of ice.”

Based on these cocktail revelations, we’ve compiled a series of recipes to help you craft your own tasty gin drinks at home.

Papa Salt & Pepper (Margot Robbie’s Cocktail)

  • 2 oz Papa Salt Gin
  • 4 oz soda water
  • Orange twist for garnish
  • Crack of black pepper

Fill a glass with ice. Pour gin over the ice. Top with soda water, and garnish with an orange twist and a crack of black pepper.

Papa’s Tremendous Paloma (Josey McNamara’s Cocktail)

  • 2 oz Papa Salt Gin
  • 4 oz grapefruit soda
  • 0.5 oz fresh lime juice
  • Grapefruit wedge for garnish

Add gin, grapefruit soda and lime juice to a glass filled with ice. Stir gently, and garnish with a grapefruit wedge.

Classic Dry Martini (Tom Ackerley’s Cocktail)

  • 2.5 oz Papa Salt Gin
  • 0.5 oz dry vermouth
  • Green olive for garnish

Fill a mixing glass with ice. Add gin and dry vermouth. Stir well until chilled. Strain into a martini glass. Garnish with an olive.

Lime and Yuzu Highball (Charlie Maas’ Cocktail)

  • 2 oz Papa Salt Gin
  • 5 oz Fever Tree Sparkling Lime and Yuzu
  • Lime wedge for garnish

Fill a glass with ice. Add gin and top with Fever Tree Sparkling Lime and Yuzu. Stir gently, and garnish with a lime wedge.

Blood Orange Gin & Soda (Regan Riska’s Cocktail)

  • 2 oz Papa Salt Gin
  • Soda water
  • A large slice of blood orange
  • Lots of ice

Fill a glass with ice. Pour the gin in and top with soda water. Squeeze a juicy slice of blood orange over the drink, drop it in, and stir before enjoying.
