Very Olde St. Nick Immaculata 2026 is a Kentucky bourbon released by Preservation Distillery in Bardstown. It blends Preservation's own 8 year old wheated pot-distilled bourbon with a 10 year old high-rye Kentucky bourbon and a sourced 19 year old Kentucky bourbon. It is cask strength and unfiltered at 118.2 proof and retails for about $260.
There are notes of toasted nuts, dark roast espresso, crème brûlée, Maraschino cherry syrup, dried blueberries, pipe tobacco, and praline on the palate, and the finish lingers and tingles.
The front palate experience was warm, juicy and viscus, reminding me of some older oily scotch mouthfeels I have stumbled upon. That was before it continued to blossom with caramel-vanilla pudding, hard-cherried candy and intense molasse.
The palate brings more sweet flavors but also more defined oak, with brown sugar and toasted marshmallow joining, along with a peppery grain note as it transitions to the finish.
