  • Nose:

Decadent, dessert-forward nose. Dark chocolate, walnuts, graham cracker, gingerbread, hazelnut, caramel.

  • Taste:

Rich, delicious palate with a great viscosity. Cherry, dusty oak, licorice, watermelon candies, tobacco, chocolate, caramel, cinnamon.

  • Finish:

The finish opens with baking spice β€” cinnamon, nutmeg β€” which is followed by cherries, raisins, walnuts, tobacco and dry oak and tannin.

  • Overall:

This is a spectacular, well-aged bourbon. It weaves oak, chocolate, fruit and baking spice notes together for a superb, balanced expression. It’s sweet and has that dusty-oak vibe you get on a lot of Kentucky bourbons with higher age statements than this (that's thanks to that Texas climate, I suppose). In that sense, it reminds me of a really good Wild Turkey bourbon.

One of the best parts of this Bottled-In-Bond series is that you can taste different Still Austin mashbills at a new age each year. For me, different releases in the series have taken something of a "leap" in different years β€” I suppose you could call it reaching peak maturation. This came last year for the rye, and two years ago for the Red Corn bourbon. Well, this is the year for the Straight Bourbon Bottled in Bond, which has been sort of a "good not great" release for me in past years. That's not the case in 2026.
