Cabrito Tequila Reposado is produced at Tequila Centinela in the Los Altos Southern region of Jalisco. The blue weber agave is cooked in stone and brick ovens, extracted with a roller mill and fermented in stainless steel tanks. It undergoes double distillation in stainless pot stills with copper coils and is bottled aged at 40% ABV.
I have found it very interesting that Cabrito Reposado seems so much smoother that the Blanco spirit I tasted 2 years ago. I believe the spirits are made in much the same way with the only difference being the time the Reposado spirit has spent resting in oak.
