Eric Church Establishes Whiskey JYPSI as One of America’s Most Exciting Young Whiskey Brands With Thrilling New Release

Eric Church has released his third whiskey, Whiskey JYPSI Legacy Batch 002: “The Alchemist.”
A new Whiskey JYPSI release is set to land next week from Outsiders Spirits, the company co-founded by 10-time GRAMMY-nominated country music star Eric Church, the brand confirmed to Bottle Raiders.
Set to debut May 15, Whiskey JYPSI Legacy Batch 002: “The Alchemist” is the third release from Church’s whiskey brand and follows hot on the heels of the second JYPSI whiskey, which was announced in early April.
The Alchemist is an eclectic blend of whiskeys from around the globe each aged at least a decade.
“When I write a song or put a band together, a lot of times you think – do all these things really work together? And you don’t really know until you get on stage,” Church said in a news release. “The same is true with making whiskey. You have ideas, but don’t know until you try them. But we’ve found out…the more fearless we are, the better our whiskey is. ‘The Alchemist’ is the perfect representation of that fearless spirit, and I’m really proud of where we’ve landed.”
Here’s how the blend breaks down:
- 60%: 11-year-old Tennessee corn whiskey aged in re-charred American oak barrels
- 36%: Canadian rye whisky aged for 18 years in ex-bourbon casks. After those 18 years, the Canadian spirit was split into thirds. Each third was finished in a different cask for six months: port, Spanish vermouth and sherry.
- 4%: 10-year-old Indian single malt
Whiskey JYPSI speaks highly of each component of the blend, claiming the Tennessee component is “smoother and rounder” than most Tennessee whiskeys thanks to the re-charred finish. JYPSI describes the Canadian rye as possessing spice that is “brilliantly countered by deep cherry, prune, and fig notes.”
“We called Whiskey JYPSI’s Legacy 002 ‘The Alchemist,’ because Alchemists took unexpected elements and tried to change them into gold — turn them into something greater,” Outsiders Spirits whiskey maker Ari Sussman said. “That’s the job of a good whiskey blender. You start with high-quality ingredients and hopefully create something that’s even greater — more than just the components.”
The brand describes the final mashbill of the blend as being “high-rye.”
Bottled at 114.3 proof, Whiskey JYPSI Legacy Batch 002: “The Alchemist” is priced at $199.99 and will br available for a limited early release starting May 15. It will be available for online order at whiskeyjypsi.com as well as at select retail locations in Tennessee, Georgia and Florida. The brand says more markets will follow.
The Indian whisky, meanwhile, the brand claims is rare and “some of the finest Indian single malt available.” That last component has earned a Double Gold Medal at the San Francisco World Spirits competition, according to Whiskey JYPSI.
Outsiders Spirits was founded in 2020 by Church and entrepreneur Raj Alva. It released its first whiskey — Legacy Batch 001: The Journey — in May 2023.
Tasting Whiskey JYPSI Legacy Batch 002: ‘The Alchemist’
We got an early taste of the new expression from Church’s Whiskey JYPSI brand. Keep your eyes peeled for our full review. In the meantime, here are our initial impression.
Nose: Sweet, creamy and complex. Big-time almond, maple and caramel cake notes on the nose are joined by pleasant oak, tobacco, a big hit of clove, cracked pepper, cinnamon and pine.
Taste: Thick, chewy mouthfeel that brings some manageable heat. The palate is rich, sweet and confectionary. There’s plenty of almond and caramel here again, joined by a big, sweet cherry danish note and undercurrents of pepper, clove, peppermint, tobacco and oak.
Finish: Long finish. It kicks off with tobacco, then goes into sweet and fruity territory with cherries and sweet blueberry pie. It settles into a sweet and savory profile with pleasant oak, brown sugar-glazed bacon, sweet butterscotch and brioche.
Overall: Whiskey JYPSI sticks the landing once again. This thrilling, complex and delightful pour is rich, balanced and delicious. JYPSI has now gone three for three on dynamic whiskey releases.
At this point, it’s readily apparent that this is no beginner’s luck — Church’s Whiskey JYPSI is quickly establishing itself as one of the best and most exciting young whiskey brands in America — celebrity or otherwise.
