‘The End of a Remarkable Chapter’: Redbreast Concludes Dream Cask Collection With Oldest Irish Whiskey in the Series

Redbreast announced the release of the final Irish whiskey within the brand’s Dream Cask Series on Thursday.
At 38 years old, Redbreast Dream Cask Zenith Edition is the oldest whiskey in the series and hosts a suggested retail price of €1,000 ($1,086).
The single pot still Irish whiskey will be available via a ballot system starting Monday.
The whiskey was distilled in 1985 and matured for 27 years in bourbon casks before spending the rest of its time in an Oloroso sherry cask. It was monitored by Master Blender Emeritus Billy Leighton and Master Blender Dave McCabe. Redbreast shared that McCabe will be taking over as master blender.
“The release of Redbreast Dream Cask Zenith Edition marks a bittersweet moment — the end of a remarkable chapter,” Leighton said in a news release. “This collection has been a labor of love and each edition has been a celebration of the craft and passion that defines Redbreast. Handing over the baton to Dave fills me with pride, knowing that the legacy of exceptional whiskey-making will thrive under his expertise.”
The whiskey marks the seventh chapter of Redbreast’s Dream Cask Series, and each bottle comes with a book made from recyclable cardboard, according to the brand.
“As I take on the role of Master Blender, I am both honored and excited to be a part of this legacy forged by Billy,” McCabe said. “This release represents a grande finale of the Redbreast Dream Cask collection and symbolizes the culmination of tradition, and the relentless pursuit of excellence. Working alongside Billy has been an honor, and Redbreast Dream Cask Zenith Edition as the final Dream Cask release, acts as the perfect ode to Billy’s passion which inspired the Dream Cask series in the first place.”
Redbreast’s Dream Cask Collection launched in 2017, according to the brand’s Instagram.
In 2022, Redbreast chose to release a 30-year-old single-pot still whiskey aged in a combination of sherry and bourbon casks. This marked a first for the series, and just 714 bottles of the release were available for the public to purchase.
Redbreast Dream Cask Zenith Edition Tasting Notes, Via the Brand
Nose: Herbaceous, with plenty of menthol, rosemary and allspice. Dark fruit and orange peel, with wood resin.
Taste: Tropical fruit, vanilla and chocolate with peppercorns. Plenty of Oloroso sherry influence adds complexity.
Finish: Spices fade to fruit and oak.
