Still Austin Took Inspiration From the ‘Endless Winter Night Sky’ For its Latest Bottled-In-Bond Blue Corn Bourbon

On Friday, One More Dram reported the latest release from Still Austin Whiskey Co. The expression is a bottled-in-bond bourbon made with blue corn in its mashbill.
According to One More Dram, the brand claims the bourbon hosts a mashbill of 26% blue corn, 25% white corn, 44% rye and 5% barley. The bourbon spent four years aging before being bottled at 100 proof.
Still Austin chose to use blue corn because the brand wanted to “invoke the endless winter night sky.” It claims this bottled-in-bond bourbon is “the perfect bourbon for sipping by the fire.”
The bottle features a distinctive label depicting a crow which was designed by an artist local to the Austin area, Marc Burckhardt. Burckhardt’s work has been featured in The Rock and Roll Hall of Fame, The Art Institute of Boston and Art Basel. Clients who have commissioned his work include The Rolling Stone, The New York Times, TIME and WIRED to name a few.
Still Austin Bottled In Bond Blue Corn Bourbon can be purchased at the brand’s tasting room in Texas or online and at specialized liquor stores starting in December. The bourbon hosts a suggested retail price of $79.99.
The brand describes the spirit as possessing “cream soda and malted milk,” aromas with “spiced plum and country apple cider.” On the “velvety” palate, Still Austin cites dark chocolate candied citrus fruit with “carrot cake and buttercream.” It finishes with “eucalyptus, oak spice, and black tea.”
In September as part of the brand’s Seasonal Bottled in Bond Series, Still Austin released a high rye bourbon. The bourbon hosted a mashbill of 70% white corn, 25% rye and 5% malted barley.
