Still Austin announced on Thursday the return of its Bottled in Bond Red Corn Bourbon, with one key difference from last year’s debut: The bourbon is a year older this time around, yielding a release with “more complex flavors,” according to the brand.
“The additional year of aging in this release has greatly enhanced the tasting experience of the Red Corn Bourbon,” Still Austin Chief Marketing Officer Mike Spadier said in a news release. “We’re proud to be one of the few Texas distillers qualified to release a Bottled in Bond series.”
The release hosts a suggested retail price of $85 and is bottled at 100 proof to meet Bottled In Bond regulations.
The Still Austin team chose to work with a mashbill composed of 36% Jimmy Red corn, 34% white corn, 25% rye and 5% barley.
This “fan favorite” whiskey meets all federal requirements to be labeled as “Bottled in Bond.” It was bottled in one distillation season by one distiller at Still Austin and aged for a minimum of four years in a federally bonded warehouse with U.S. government supervision.
In June 2023, Still Austin released its Bottled in Bond Red Corn Bourbon, kicking off a series of Bottled in Bond offerings. Each season, the brand releases a different BIB whiskey. Aside from Red Corn (summer), the other members are Bottled in Bond High Rye Bourbon (fall), Bottled in Bond Blue Corn Bourbon (winter) and a Bottled in Bond Straight Rye Whiskey (spring).
Jimmy Red Corn is an heirloom species of corn that was a favorite of bootleggers, who would often distill it into “spectacular hooch,” according to NPR. The corn nearly went extinct in the early 2000s, when the last bootlegger growing it passed away. A local farmer rescued two ears of Jimmy Red Corn, and now it is having a resurgence.
Jimmy Red Corn has made its way into a variety of restaurants, and other bourbon brands like High Wire Distilling are using this varietal in their mashbill. If you want to know what we thought of High Wire Distilling’s Jimmy Red Corn Bottled In Bond Bourbon, you can read our review here.
