This Company Claims It Can ‘Recreate’ Rare Whiskeys Using AI, Chemical Analysis and Advanced Technology

Milestone Beverages announced the launch of Stateless Whiskey, a brand that uses science and technology to replicate “rare and expensive whiskeys,” The Drinks Business reported Tuesday.

According to The Drinks Business, Stateless says its implementation of molecular technology provides the positive benefit of a lowered environmental footprint.

“Advanced technology uses machine-learning algorithms, artificial intelligence and advanced chemical analysis to produce spirits that are indistinguishable from traditional products, made with less water, land and a smaller CO2 footprint than traditional processes,” a spokesperson from Stateless Whiskey said, according to FoodBev Media.

Milestone Beverages claims using the technology will allow customers to purchase bourbons that taste like the expensive and rare ones for a fraction of the cost. According to the brand, the finished spirit is transferred to a lab, where it is altered by scientists who can change the flavors, aromas and textures of the spirits.

“We’re not just creating a new line of whiskeys, we’re taking the traditional, the non-traditional, the ‘circus freaks’ and the classic entertainers, all the diverse ingredients and processes to pay homage to tradition while pushing the boundaries of what’s possible with modern science,” Milestone Beverages Operations Manager Damith Weerakoon said, per The Drinks Business. “This is where tradition meets innovation.”

According to Weerakoon, Stateless Whiskey was inspired by the circus of all places. The Drinks Business reports Weerakoon claimed the founders of the brand were “inspired by the nomadic spirit” of the circus and the ability of its performers to “create magic wherever they went.”

The brand’s inaugural releases are a blended bourbon bottled at 40% ABV and a banana-flavored whiskey set to launch in Asia and Europe in 2024.

Other brands under the Milestone Beverages umbrella include Onikishi Japanese Whisky and Taisteal Scotch Whisky.
