Laws Whiskey House Brings Back 2 Popular Cask-Finished Bourbons

On Tuesday, Laws Whiskey House announced the return of two limited-edition whiskeys just in time for the holidays: the Honey Cask Finished Straight Bourbon Whiskey and the Four Grain Bourbon Whiskey finished in a Cognac Foeder.
Each of these expressions takes Laws’s signature Four Grain Bourbon, distilled from a mashbill of 60% corn, 20% heirloom wheat, 10% heirloom rye and 10% malted heirloom barley, and finishes it in a special cask. For the cognac finish, Laws employs a solera-style finishing process. First, the whiskey is finished in various-sized French oak casks and then moved into a 50-year-old, 1,600-gallon former cognac foeder. Each year, Laws takes a portion of the spirit out of the foeder and then adds more bourbon to replace what it took out.
Founded in 2011, Laws Whiskey House is based in Denver, Colorado.
For the honey cask-finished bourbon, Laws has a local apiary fill its empty bourbon barrels with honey. Once the honey is harvested from the barrels, the apiary returns the barrels, and Laws fills them with its bourbon.
Both bourbons are bottled at 47.5% ABV and have a suggested retail price of $84.99. They are available at the Laws Whiskey House Tasting Room in Denver, online and in select stores.

These conditions, when combined with the solera method, help to create a rich, evolving complexity that deepens with each passing year.”
