Zarza Tequila Añejo is produced in Jalisco, Mexico, using blue weber agave from the Los Altos and Tequila Valley regions. The agave is cooked in brick ovens and high-pressure autoclaves. Extraction uses a roller mill, followed by fermentation in stainless steel tanks without fibers. The tequila is double distilled in stainless steel pot stills, aged in American white oak barrels and bottled at 40% ABV.
