Yola Mezcal is produced in San Juan del Río and Miahuatlán de Porfirio Díaz, Oaxaca, under NOM-0524X. Made at Yola's own farm and distillery by an all-female team, it is twice distilled and fermented with wild yeast. The Pechuga expression, made from 8-year-old espadín agave, undergoes a third distillation with seasonal fruits, spices and a turkey breast suspended in the still.
