Wolfburn Aurora is a single malt Scotch whisky from Scotland's northernmost mainland distillery, located outside the town of Thurso in Caithness. The whisky is matured in a combination of casks with 40% aged in second-fill quarter casks, 40% in first-fill ex-bourbon barrels and 20% in first-fill Oloroso sherry hogsheads. It is bottled at 46% ABV and is non-chill filtered.
The finish is incredibly sharp and biting, with an even more bitter, herbal edge than the above — quite a surprise, and a bit of a letdown over what is otherwise a pretty interesting dram.
It's an easy sip, but still brings a reasonable amount of complexity. The most ardent fans of sherried scotch might want something that leans harder into the fruitiness of the sherry, but there's enough quality to the flavor profile that any whisky drinker should find something to enjoy.
