WhistlePig Beyond Bonded FarmStock Rye is a straight rye whiskey made from 100% Danko rye grown at the WhistlePig Farm in Vermont. It is distilled with on-site well water, aged in Vermont estate oak barrels, and bottled-in-bond as a single-barrel expression. Each barrel is aged between 4 years and 29 days and 4 years, 6 months and 17 days. Bottled at 100 proof in March 2024.
The palate is more concentrated, showing toasted oak, raisins, dried apricots, and sweet mint. Like the nose, water dials up the fruits, revealing baked apples, pear tart, and orange peel. The finish is toasty and chocolaty, with good length.
Overall the whiskey is savory/spicy with little sweetness. From an educational view point, the whiskey is interesting to try, but it might serve better in a blend or with a more diverse mash bill.
