As time passes, whisky starts to offer you spicy notes from virgin oak on the nose and on the palate. The green notes also take you to a waterfront location with fresh air and lots of waves hitting the promenade!
I am a great lover of Irish Whiskey when it’s bottled at higher proof and I strongly hope Waterford can push the industry so more whiskey lovers can share the experiences I have had.
The citrus, toffee, and salted-caramel sweetness of the palate are disrupted by a shockwave of pepper, leaving tangy peels, hints of nuts, and sour gooseberry in its wake before a finish of citrus and sweet barley.
I don’t know any other distillery that’s put out something this young, this fast, and had it taste nearly this good. It’s a monumental achievement and I don’t want to undercut that fact at all.
Adding water opens up touches of citrus fruits and dried flowers. The finish is very long, aromatic, and thick with lingering spices, butterscotch, toasted oak and a touch of grilled fruits.
