  • While not conventionally tasty or aromatic is IS intensely interesting and it morphs and changes as it opens with notes getting more or less prominent over time. However the one note that stays constant is a metallic-fishy-burnt note that stays even and unfortunately present.

  • It is hardly sweet, but what I do find is raw honey. It has some citrus zest, but the main fruit I get with it is apricot. However, what is surprising is the crisp salinity that underlies the dram and lingers on the finish.

  • There’s a nice bit of gingery spice on the mid-palate, but the overall experience, especially the finish, is marred by a bland, malty sweetness that turns oddly vegetal as it lingers on the tongue.

  • The palate had apricot lite ripe stone fruits with caramel, honey, baking spices and black pepper. That led to a finish wit marzipan, sweet apricot, dark chocolate and cocoa! There are also small traces of that coastal character I got from the Waterford Organic Gaia 1.1.
