Viva México Tahona Blanco is a limited-edition offering in the brand's lineup, debuted in 2025. In place of a roller mill, the 48%-ABV Blanco is extracted with a volcanic stone tahona. A smaller difference that goes unmentioned in the headline: Stainless steel tanks have been replaced by open-air, wooden pipones, in which the mash is fermented with fibers. Apart from that, this is standard Viva México. Highlands agaves, deep well water and an additive-free recipe.

  • Nose:

    Opens with a wonderfully rich aroma of roasted agave. Underneath the sweetness lurks plenty of brine and spice. Black pepper, gardenia, preserved lemons, orange pith, thyme and basil. More than enough minerality to go around, plus an unmistakable lick of ethanol that punches far higher than 48% ABV.

  • Taste:

    Agave and minerality take center stage. It's got a distinct vegetal vibe halfway between grass and green olives, but the saltiness is balanced out by plenty of natural sweetness. Grapefruit, tangerine, hibiscus, anise, tilled earth and a trace of nuttiness. Packed to the brim with flavor.

  • Finish:

    A drawn-out finish with hints of Herbs de Provence, mint, brine and agave nectar.

  • Overall:

    If this is what tahona-crushed tequila tastes like, it's hard to imagine going back to anything else. The combination of herbs, citrus and minerality hits just about every note you want to see in a top-tier blanco. All that plus an out-of-this-world mouthfeel, and it's beginning to look like Viva México might have one of the best tequilas of the year on its hands. Highly recommend.
