Sourced from undisclosed Indiana and Kentucky distilleries, this non-age-stated bourbon comes to us from the Bardstown, Kentucky-based Preservation Distillery. Although it features components up to 15 years of age, we have no idea how much of the bourbon is that old.

  • Water is a must with this whiskey, bringing out notes of toasted coconut and more fruit, giving it a bit of an unusual but lively blackberry bent.

  • There is a lot going on and it certainly won’t be for every palate. This glass takes time to evolve, as each sip brings forward new notes and really entreats the drinker to test their palate.

  • Nose:

    Sweet and creamy on the nose with heavy caramel and a touch of grain. Buttery, buttery, buttery.

  • Taste:

    Moderate palate with a kick of ethanol at first. There’s a bit of grain and then heavy sweetness, pepper, caramel candies and a touch of orange peel.

  • Finish:

    Quick, clean and sweet. Somewhat straightforward in a one-dimensional, sweet way.

  • Overall:

    This release drinks like a lot of the WhistlePig Canadian ryes I’ve had in the past but without the punch of rye spice. It’s sweet, creamy and fairly straightforward but enjoyable enough all the same. All in all, it’s fairly one-dimensional, but what it does, it does just fine.
