Produced in Santiago Matatlán, Valle Oaxaca Pearl Sprat 52° mezcal is made from sprat (Agave angustifolia haw) grown for 8 years in black soil. The agave is cooked in a volcanic stone oven fueled by mesquite wood, crushed with a horse-drawn stone tahona, and fermented in white oak vats. It is double-distilled in copper stills and bottled unaged at 52% ABV.
