Tokki Soju Black Label is produced in Rohnert Park, California, from glutinous rice sourced in Sacramento Valley. The rice is milled, cooked and combined with nuruk made from barley cakes inoculated with Aspergillus oryzae for a 7–10 day parallel fermentation. The mash is distilled twice in a copper hybrid still, and the final spirit is bottled at 40% ABV without additives or sweeteners. Founded in Brooklyn in 2016 by Brandon Hill, Tokki Soju was the first U.S. distillery focused on traditional rice soju. Operations moved to Chungju, South Korea in 2019, and in 2022 U.S. production was re-established in Rohnert Park, California.
