Tierra Noble Tequila Blanco is produced at Premium de Jalisco in Mazamitla, Jalisco, at an elevation of 7,200 feet. Made from 8- to 10-year-old blue weber agave sourced from both Los Altos and the Valley of Tequila, the agave is cooked in autoclaves, extracted with a roller mill and fermented in stainless steel tanks using spring water and Montpelier wine yeast. A secondary malolactic fermentation follows the initial alcoholic fermentation. The tequila is then double distilled in custom stainless steel pot stills and bottled unaged at 40% ABV. It retails for around $45.99.
