Thomas S. Moore Cabernet Sauvignon Finish Bourbon is produced by Barton 1792 Distillery in Kentucky. Made from a mashbill of 74% corn, 18% rye and 8% malted barley, the bourbon is first aged in new charred oak barrels, then finished for an additional 1 to 3 years in ex-cabernet sauvignon casks. It is bottled at 47.65% ABV and priced around $70. This release is part of Barton’s wine-cask-finished series that also includes port and chardonnay finishes.
The middle palate reminds me of a creamy, spongy caramel-vanilla tres leches (my favorite Mexican cake). The finish is bold with a soothing raspberry jam candy and charred oak spice. This is a very good bourbon whiskey which I really enjoyed imbibing.
I’m happy with Thomas Moore Cabernet Cask Finish, although the “Mid Shelf+” rating might not fully capture it. The amount of Cabernet Sauvignon finish is just right and meshes well with the base 1792 bourbon, fusing into a nicely sweet, berry-forward, tobacco-y, and moderately spicy bourbon that’s quite fragrant and delicious.
