The Beverly: The QuintEssential Edition is a limited-edition American single malt whiskey created through a collaboration between Beverly Spirits and Cedar Ridge Distillery. Distilled and aged for a minimum of six years at Cedar Ridge in Swisher, Iowa, the whiskey is finished in first-fill Amontillado sherry and French oak casks under the direction of master blender Murphy Quint. Bottled at natural cask strength of 116.9 proof (58.45% ABV), it offers notes of cocoa, soft leather, caramel, toffee, candied cherry, dark chocolate and sherry, according to the producer.

  • Nose:

    Chocolate. Like real dark chocolate! There's something almost savory underneath it — maybe leather, maybe tobacco. Either way, this nose is GREAT.

  • Taste:

    Caramel and toffee dominate, but there's this candied cherry note that sneaks in and makes the whole thing pop. It's sweet but not one-dimensional. The proof carries weight, but it doesn't fight you.

  • Finish:

    This is where it shines. It just keeps going. Warm, slightly sweet, dries out at the end in the best way. You keep licking your lips wanting more.

  • Overall:

    American single malts are having a moment, and this is one of the reasons why. Cedar Ridge out of Iowa with a sherry and French oak finish isn't what most people expect from a non-Kentucky whiskey, and that's exactly the point. It drinks way above what you'd guess. Drink it neat or maybe add a drop of water if you want to open it up, but honestly, it doesn't need help.
