Following 25 years of fine dining experience in the Chicago area, Chef John Des Rosiers is venturing into the world of agave spirits. Tequila Cambio's commitment to old-school technique — confirmed additive-free, tahona-crushed agave and a welcomingly high 46% ABV — were all on full display when we tasted its killer Blanco earlier this month. Bringing some barrel into the equation, Cambio Reposado is aged in a combination of French oak Chardonnay, White Bordeaux and White Burgundy casks. Let's see if it can keep up the steam.

  • Nose:

    Fresh and zesty, nice blend of light oak and tannin, caramel, pepper, a pop of orange peel and a hint of lime and ginger.

  • Taste:

    Moderate mouthfeel, nice balance of oak, pepper, ginger, more citrus and some fresh rye bread. Really lovely.

  • Finish:

    Long finish, fresh sourdough, honey, orange peel, fresh cracked pepper, ginger and some caramel.

  • Overall:

    Overall, this brand is officially on our sleeper list - a really great repo that I’ve only just heard of. This is really special stuff.
