On paper, Cambio Tequila combines everything that an agave spirits lover could dream of; tahona-crushed agave, confirmed additive-free and an unusually high 46% ABV. With an intriguing bottle to boot, this upcoming launch from Illinois-based Chef John Des Rosiers piqued our interest for all the right reasons. What's more, the brand's Blanco is rested for 45 days in French oak barrels — just a couple weeks shy of a reposado. Let's see how all the influences add up.
A squeeze of lemon, some vanilla cream, and a bit of butterscotch. That French oak may be technically “neutral,” but it imbues the tequila with plenty of flavor you just don’t see in a blanco, softening up the experience and taking it one step toward the world of reposado.
Nice presence on the palate, heavy on spice and earthiness, pepper and crushed stone, some pear [...] This is a really great blanco from a brand I frankly have never seen before. They’re doing everything I like to see and this expression tastes great… awesome stuff.
