Released on Dec. 6, 2025, this is the second Tanager release from the critically acclaimed Austin, Texas-based distillery, Still Austin. With blending efforts led by Nancy Fraley, who brought the "cigar blend" category to American whiskey, the 2025 edition of Tanager is aged at least six years and built from a combination of red- (25%), white- (22%) and blue-corn (53%) bourbons (blue and red are new this year) using rye and malted barley as secondary grains. Tanager is blended using the Petites Eaux technique, which is French for "Small Waters." Common in the worlds of cognac and armagnac, this technique involves lowering the proof of a spirit before aging. For Tanager, Still Austin aged a portion of the whiskey at 50 proof for at least a year before adding it to the base whiskey for final proofing.

Priced at $150, this is an extremely limited bourbon that's bottled at 107.5 proof. Tanager comes packaged in a red gift box featuring magnetic closure and accompanied by custom artwork created by Marc Burkhardt.

  • Nose:

    Intoxicatingly beautiful and rich nose full of buttercream frosting, marzipan, a tinge of truffle oil, duck fat and tobacco.

  • Taste:

    Gorgeous palate. Wow. Cherries, raspberry preserves and butterscotch mingle with cinnamon, leather, tobacco, lavender, candied ginger and strawberry taffy. Once again, that unusual hint of truffle character peaks through, as well.

  • Finish:

    Long and satisfying finish. Cinnamon, brown sugar, tobacco, Luxardo cherries, pepper, vanilla.

  • Overall:

    This is incredible whiskey — one of my favorites of the year for the second year in a row. I don't have any left of my sample from last year to compare, but 2025's release certainly lives up to the high bar 2024's set.
