Released each summer, Red Corn Bourbon is a member of Still Austin's regularly released Bottled In Bond lineup. This is the third year it's been released, now six years old. As always, it's distilled from a mashbill of 36% Jimmy Red corn, 34% white corn, 25% rye and 5% malted barley and bottled at 100 proof, as required by Bottled In Bond regulations.

  • Nose:

    Sweet, rich and inviting on the nose: buttercream, crème brûlée, stewed cherries and plums, cinnamon, sassafras.

  • Taste:

    Moderate mouthfeel. Pleasantly oaky with graham cracker, butterscotch, dark chocolate, cocoa powder, cinnamon, cherry, blackberry, fig and sassafras again.

  • Finish:

    Still rich and sweet on a long, full finish. Gingerbread, more butterscotch and cherry, browned butter and chocolate shavings. The finish concludes with oak and tannin.

  • Overall:

    A delicious and rich bourbon, Still Austin's Red Corn Bottled In Bond Bourbon was delicious in year 1 and evolved into a true rockstar in year 2. Year 3 brings about probably the best iteration yet. It's rich, dessert-forward and perfectly oaky. Six years in the Texas heat, after all, is very different from six years in a cooler, wetter climate. This is one of the best, most underrated annual bourbon releases, and I look forward to it each year.
