Starlight Distillery Carl T. Huber's Mizunara Reserve Bourbon is a small batch, cask strength release made with grains grown on the distillery’s 700-acre farm. It is double pot distilled using a Vendome copper pot still and crafted with a sweet mash process. The whiskey blends eight barrels of Starlight’s 7-year-old 3- and 4-grain bourbon mashbills. Bottled at 116 proof, it is aged first in new American white oak barrels, then finished in Japanese Mizunara oak sourced from 200- to 500-year-old trees grown on Japan’s northernmost island.

  • Nose:

    Strong, very inviting nose full of oak, Bavarian cream, apple bake, cinnamon, brown sugar.

  • Taste:

    Powerful and very oaky palate that delivers plenty of tannin and is quite astringent but tasty. Caramel, taffy, icing, black cherry.

  • Finish:

    Oak, tannin, a bit of minerality, butterscotch and cinnamon.

  • Overall:

    A very good but ultimately somewhat unbalanced bourbon; the mizunara dominates the distillate a bit more than I'd like.
