Southern Star Paragon Bottled-In-Bond is a wheated bourbon produced by Southern Distilling Company in Statesville, North Carolina. It is distilled from a mashbill of 70% corn, 16% wheat and 14% barley, aged for at least four years in new American oak.
Wheated bourbons done right make excellent sippers or cocktail-friendly spirits. Southern Star Paragon Bottled-In-Bond plays that card quite well, presenting a classic example of what this whiskey specialty could be—nicely played.
This is a solid sipping bourbon. My only complaint is that the proof delivers a little too potent to really let the nuance of the glass shine; the big flavors hit hard though, and as such I think many folks will be able to taste along to these notes well - no expert taste buds needed.
The palate is oily and a touch sweeter with notes of Cracker Jacks, caramel apple, orange peel, and pound cake while the finish showcases a bit of stone fruit and a generous, lingering warmth.
