Sonbi Gin is a dry gin produced by Tokki Soju in Rohnert Park, California. It is distilled from 100% corn neutral spirit and features 10 botanicals: juniper, Schisandra berries, Chinese licorice, grains of paradise, cassia, green cardamom, coriander, lemon peel, orris root and angelica root. Juniper is macerated overnight, lemon peel is vapor distilled and the remaining botanicals are added during distillation in a copper continuous column still. The gin is rested for two months before bottling. Sonbi Gin has an ABV of 48%.
