Siempre Tequila Exclusivo Vivo is a limited release offering with only 9,000 bottles produced. It is crafted using an old Hispanic-Peruvian method of distilling fermenting mosto vivo, where the yeast remains alive during distillation. The tequila was created in partnership with Master Tequilero Sergio Cruz and International Tequila Academy founder Adam Fodor.
I have never before heard of a spirit which touts a living yeast present during distillation; but if this is an example of the outcome, then I am very glad that this “lost distillation technique” has been rediscovered.
