Shinzato Whisky comes from Shinzato Shuzo in Okinawa, Japan and retails for about $96. The whisky is produced from 100% Indica rice and fermented using black koji mold Aspergillus luchuensis, a traditional method in Okinawan distilling. After distillation, the spirit ages in a combination of ex-bourbon and ex-sherry casks for eight years, with no added sugar or flavoring, and bottled using aged rice distillate and water.
