Sentinel of the Desert Bourbon starts with a blend of 2 and 3 year old bourbon distilled and initially aged in Ohio. This 60% yellow corn, 35% pumpernickel rye, and 5% heritage malt mash bill bourbon is finished on freshly harvested Whiskey Del Bac mesquited barrel staves. It is bottled at 46% ABV/92 Proof, and has a recommended retail price of $40 a bottle. The bourbon is then filtered across mesquite charcoal from the mesquited malting process in what is called the Pima County Process.
A sweet, spicy, mildly smoky, untraditional Rye Whiskey; and while a touch hot on the ABV it's also undeniably tasty and draws you back in to sip, savor, and contemplate.
Sentinel of the Desert Bourbon features a hint of smoke and does more to add a small bit of complexity to the bourbon than to act as a major flavoring agent. But that is also the bourbon’s major flaw: it’s too light. In trying to be approachable, the release lacks sufficient substance.
