The Burning Chair from Savage & Cooke is a 4-year-old bourbon aged in new American oak and finished in Napa Valley cabernet barrels. Created by winemaker Dave Phinney, this whiskey rests at 44% ABV and hosts a suggested retail price of $50.
Flavor and mouthfeel are also subtle, sometimes too much so; while there are lovely floral and fruit notes, along with spices, pistachio, toasted grain, and orange oil, a bit more amplitude would go a long way.
The excellent mouthfeel and bolder finish were the stand out components for me, with the palate failing to deliver some of the flavors that the nose promised. The wine finishing seemed to smooth out any of the brittleness or spikey notes on an otherwise relatively young whisky.

House Review
Nose:
Toffee, pepper, some faint oak, honey and a touch of sour funk. Pepper, a bit of rising bread, vanilla bean.
Taste:
Caramel, honey, light oak. Thin on the palate, no heat, there’s a bit of honey, almonds, some sweet vanilla. Overall, not wildly complex, but it’s pleasant.
Finish:
Short to medium finish. Light on ethanol, light on oak. Toffee, some vanilla bean, light barrel char and baking spice.
Overall:
Burning Chair sits on the cusp of being a really enjoyable whiskey. All it needs is a touch more time in the barrel.
